The Best Way to Use Your Summer Tomatoes

Share:Pin on PinterestShare on FacebookTweet about this on Twitter

Is it just me, or are tomatoes even better than usual this summer? Every batch I pick up, whether from the grocery store, the farmer’s market, or home grown, just seems extra sweet and bright. I’m all about it. Summer may be coming to a close relatively soon, but that doesn’t mean you can’t enjoy this season’s tomatoes to the fullest.

Here are three of my favorite recipes from across the internet that I think are more than worth trying. Pro tip: test some of these out and if/when you fall in love with one (or more), start making bonus batches to freeze and enjoy at a later date!

  1. Traditional Shakshuka – this recipe is from Souper Cubes. Not only is it fantastic, but if you’re interested in freezer friendly dishes and saving up a stock of something delicious … check out their amazing product!
  2. Slow Cooked Cherry Tomatoes with Coriander and Rosemary – I found this one on Epicurious and am utterly obsessed. My favorite way to enjoy this one is on top of ricotta toast. Thank me later.
  3. Charred Tomato Salsa – the char is key! And let’s be real … you can never have enough salsa. Thank you Modern Proper for this one.

Short, sweet (literally), and delicious – I’d love to know which recipe you try first!

Rebecca McKinney

I was born a foodie. My dad is a chef, baker, and restaurant owner and my mom might as well be because she owns whatever kitchen she walks into. I grew up working in my family’s restaurant and bakery in Pawling, New York – McKinney and Doyle. I started behind the bakery counter at 12 years old after begging my parents to let me start working. At 16 I worked as a hostess. By 18 I was serving tables and training behind the bar where I then worked every other weekend throughout my college career. Even now, when I am visiting my family in New York, I help out where I’m needed. To make a long story short, the food and restaurant industry has been my life for as long as I can remember.

I wanted to create this blog for a few reasons. First and foremost, to share tips, tricks, and knowledge about the food and beverage industry in general but also to help people see a different side of the restaurant world. Every restaurant has a totally unique culture and world within it. I want to help open people’s eyes to more than how fast the service is or how easy or hard it is to secure a reservation.

So, thanks for stopping by! I welcome your ideas, input, and feedback and hope you enjoy!

Eat well & travel often,

Becky McKinney
