You’ll hear me say this a few times in the video, but this recipe is SO good. Portion control, something I pride myself on and help coach others to master, is extra challenging for me with this one because of how much I love this recipe. BUT, I barely had to tweak it for the health coach in me so that’s a win!
Jeeze, the freeze frame of that video is less than flattering. I need to figure out how to change that for next time. Anywho, here are the recipes!
Original:
- 1 store cooked roasted chicken
- Corn tortillas
- 1 small onion – minced fine
- Salt
- Pepper
- Garlic powder
- Olive oil
- Grated Pepper Jack cheese
- Salsa Verde
De-bone chicken and cut/shred. In a large fry pan, add olive oil to coat the bottom and saute onions until soft. Add chicken and season with salt, pepper and garlic powder. Stir and cook for 10 minutes until well heated. Pour chicken mixture into a bowl. Heat corn tortillas and put into a hand towel so they stay warm. Put one tortilla on a small plate, fill with 1 large spoon of chicken and add some shredded cheese. Roll up tightly and put back into fry pan (should still have some oil left on the bottom). Continue until pan is filled. Top with green salsa and shredded cheese and cook on stovetop on medium flame/heat for 5 minutes. Cover and continue cooking until cheese is completely melted.
Healthified:
