Did you know that there’s actual research that supports the idea that humans love crunchy things? It’s true! Our brains are wired to love a good crunch. But that is obviously not the only texture out there (thankfully!).

When you think about your favorite or least favorite foods, it’s pretty much impossible not to consider texture. For example, for me, mushrooms are a no go not because of their flavor (which I actually love), but because of their texture. I will literally cook with mushrooms and then remove each and every one from a dish so I get the flavor without having to chew one.

Texture is actually determined by sensory receptors in your mouth and even though foods can be cooked exactly the same way, a dish shared among multiple people, etc. … that doesn’t mean we all experience texture the same way! We develop our own personal expectations of what a food will taste like AND feel like, and if a bite differs from expectations, we don’t like it. Makes sense, doesn’t it?

To expand even further on the point that texture is in at least some part, a human construct, we can look at things culturally. In the US, slimy or slippery textures are usually a sign that a food has gone bad. But in other cultures, it’s common and expected with many foods.

I was born a foodie. My dad is a chef, baker, and restaurant owner and my mom might as well be because she owns whatever kitchen she walks into. I grew up working in my family’s restaurant and bakery in Pawling, New York – McKinney and Doyle. I started behind the bakery counter at 12 years old after begging my parents to let me start working. At 16 I worked as a hostess. By 18 I was serving tables and training behind the bar where I then worked every other weekend throughout my college career. Even now, when I am visiting my family in New York, I help out where I’m needed. To make a long story short, the food and restaurant industry has been my life for as long as I can remember.

I wanted to create this blog for a few reasons. First and foremost, to share tips, tricks, and knowledge about the food and beverage industry in general but also to help people see a different side of the restaurant world. Every restaurant has a totally unique culture and world within it. I want to help open people’s eyes to more than how fast the service is or how easy or hard it is to secure a reservation.
