2019 Recipe Project: Tuscan Beans

Okay, this dish is, no joke, in my top five favorite dishes in the entire world. I could eat these EVERY day without fail and never get sick of them. That’s how good they are. The recipe itself is healthy as can be so I have no tweaks to make and honestly, I wouldn’t dare change a thing anyway because these beans are THAT good.

If you’ve ever eaten dinner at M&D, you’ve likely seen these beans on the menu as a bed for something else delicious. My favorite? Scallops over these Tuscan beans and spinach. Like … I need that. Right now.

In the meantime though, I’ll share the recipe for the beans with you and cross my fingers and toes that you try it out immediately. You won’t regret it.

Ingredients:

  • 1 pound dry white beans
  • 1 large can whole peeled tomatoes
  • 8 cloves garlic – thinly sliced
  • 1 quart chicken stock
  • 2 stalks fresh rosemary
  • salt and pepper to taste

Soak beans overnight in enough water to cover. Combine all ingredients in a roasting pan and roast at 350 degrees for 1 1/2 hours or until beans are tender. Season well with salt and pepper.

Bonus Recipe: Grilled scallops

  • 10 large sea scallops – remove muscle
  • 4 tbsp EVOO
  • 1 bunch fresh basil – chopped super fine
  • Salt and pepper to taste

Combine oil and basil to make marinade. Season scallops with salt and pepper and coat in marinade for 30 minutes. Grill scallops and serve over beans.

First and foremost, to share tips, tricks, and knowledge about the food and beverage industry in general but also to help people see a different side of the restaurant world. Every restaurant has a totally unique culture and world within it. I want to help open people’s eyes to more than how fast the service is or how easy or hard it is to secure a reservation.
